Thank you for taking the time to check out my blog. I feel like it is important for you to understand my motivation to be healthy while enjoying life. I have lived for so long concentrating on the glass being half empty rather than half full. This is my public commitment to change that way of thinking and just be happy.

what can I learn

I feel like I have dedicated a great deal of my time on researching what I can eat. It is much different than approaching the day not knowing what you’re going to eat when your options are unlimited. Now it is figuring out what to eat that is within my criteria. I use to focus on my workout and what was going on at work but now my whole world has been flipped upside down. I know I have always been truly passionate about food but I never it was to this extent.

MENU

Breakfast: Amaranth flakes, almond milk and bananas

Lunch: Brown Rice Tortilla with turkey, Sheep’s Milk cheese,

2 cuties mandarin oranges and apple

Snack: Trader Joes gluten free granola

Dinner: Coconut Rice – Jasmine Rice with coconut milk and water, coconut shrimp- coconut, lime juice, cayenne pepper, salt and pepper. Add coconut aminos to taste.

Desserts - Rice Crispy treats.

Happy Thoughts: The first thing I am reintroducing is yeast!
