Thank you for taking the time to check out my blog. I feel like it is important for you to understand my motivation to be healthy while enjoying life. I have lived for so long concentrating on the glass being half empty rather than half full. This is my public commitment to change that way of thinking and just be happy.

Cook with Love!

My mom had always been an amazing cook and every time I try to get a recipe from her she doesn’t measure so it makes it absolutely impossible to create food as amazing. Any great cook with a signature recipe seems to operate the same way. Making my mother’s food is very humbling and I think the best advice she has ever given me is to add love and cook with happiness. It’s the best advice I can offer anyone. Love what you do and what you produce will always be unlike anything else.

Menu:

Breakfast: Rice Crispy’s and bananas

Lunch: Turkey with Rice Crackers Crunch Masters

Dinner: Chicken Jambalaya

Special Stuff: Mom’s Chicken Jambalaya - Cook onions until translucent then add chicken and seasoning (cayenne, salt, pepper, cumin, chili powder, onion flakes, sugar, and red pepper flakes). Then add celery, carrots, orange pepper, yellow pepper, jalapeno pepper, and black beans. Add chicken stock until it covers everything and add a handful of rice. Cook for 30 min.
